
Tomato Basil Pasta Salad
Make this recipe in the morning and let sit on the counter all day stirring occasionally. Peeling the tomatoes is not essential but its worth the effort. WW Blue: 6 pts
Ingredients
-1 Box of penne pasta (16 oz)
-5 medium tomatoes
-1/4 cup basil julienned
-2-3 cloves of garlic minced
-1 TBSP extra virgin olive oil
Directions
- Bring a pasta pot of water to a boil
- Cut a small X into the bottom of each tomato and place in the boiling water
- When you notice the skin of the tomato start to come away from the X (about 1-2 minutes) take the tomatoes out with a slotted spoon and allow to cool.
- Add the pasta to the boiling water and cook according to the packaging. Drain and put in a large boil.
- Once cooled, peel away the skin from the tomatoes and remove the core. Chop the tomatoes into 1/2 inch pieces. Retain all of the tomato juice and add both the juice and pieces to the pasta.
- Mix in the julienned basil, olive oil, and minced garlic. Salt and pepper to taste.
- Leave the pasta salad covered on the counter until ready to eat. Stir occasionally throughout the day.
