
Instant Pot Refried Beans
This is an easy 0 point (blue) side dish. I usually double the recipe so that we have lots of left overs. Make sure to prep ahead and soak your beans.

-1cup dried pinto beans
-3 cups water
-1 small yellow onion
-2 cloves of garlic
-3 tsp tomato bouillon with chicken flavor (I like Knorr)

**8 hours before cooking soak pinto beans in large bowl of water making sure they stay submerged until ready to cook**
- Roughly chop onion into a large dice. Add pre-soaked beans, water, onion, garlic, and bouillon into the instant pot.
- Set instant pot to pressure cook high for 20 minutes. After the timer goes off, allow to natural release for an additional 10 minutes.
- Drain beans making sure to reserve most of the liquid. I place a colander over a large bowl in order to save the liquid.
- Working in batches, blend the bean/onion/garlic mixture with about a 1/2 cup of reserved cooking liquid until smooth or desired consistency.
- Serve immediately
