Instant Pot Refried Beans

This is an easy 0 point (blue) side dish. I usually double the recipe so that we have lots of left overs. Make sure to prep ahead and soak your beans.

Ingredients

-1cup dried pinto beans

-3 cups water

-1 small yellow onion

-2 cloves of garlic

-3 tsp tomato bouillon with chicken flavor (I like Knorr)

**8 hours before cooking soak pinto beans in large bowl of water making sure they stay submerged until ready to cook**

  1. Roughly chop onion into a large dice. Add pre-soaked beans, water, onion, garlic, and bouillon into the instant pot.
  2. Set instant pot to pressure cook high for 20 minutes. After the timer goes off, allow to natural release for an additional 10 minutes.
  3. Drain beans making sure to reserve most of the liquid. I place a colander over a large bowl in order to save the liquid.
  4. Working in batches, blend the bean/onion/garlic mixture with about a 1/2 cup of reserved cooking liquid until smooth or desired consistency.
  5. Serve immediately
