Whitney's Cucumber Pico
All of the chopping can be done before hand. Wait to mix in the seasoning until right before your event. The salt in the seasoning will sweat the cucumbers so if it sits too long then it will dilute. The seasoning is made into a paste because the cucumbers will provide the rest of the liquid.
Ingredients
-2 English cucumbers
-1 Red onion
-2 Jalapenos- cleaned to your desired heat level
-1 Packet of dry Hidden Valley ranch mix
-1 TB Rice vinegar
Directions
- Finely chop the cucumbers, red onion, and jalapenos into uniform pieces. Mix the chopped vegetables into a medium bowl.
- **If making ahead: cover and refrigerate until right before serving**
- When ready to serve: In a separate small bowl, combine the ranch powder and rice vinegar into a thick paste.
